Tomato Gnocchi



Very easy, minimal time required


  • 4 fresh tomatoes chopped up or 1 can of chopped tomatoes
  • 3tbsp of concentrated tomato puree
  • 500g Gnocchi
  • Italian herbs seasoning
  • Salt and pepper


  1. In a pot, fry a little oil and add the tomato puree, allow to fry for a few minutes on medium to high heat
  2. Now add the tomatoes (either fresh or from the can)  and let it simmer for a few more minutes
  3. Add boiling water, around a litre but more or less depending on the final consistency you would like it to be
  4. Add around 2tsp of the Italian herbs seasoning as well as salt and pepper to taste
  5. Let the mix simmer for around 5 minutes on medium to high heat
  6. Now add in the gnocchi and allow it to marinate in the flavours
  7. The gnocchi won’t take long to cook (around 3-5minutes), you’ll know it’s ready when they rise to the surface. Once done, serve in a bowl and eat away!

Additional notes

You could add some mozzarella or parmesan shavings at the end to give a cheesy addition if you like

To make it look even prettier, garnish with a few basil leaves
